dc.description.abstract |
Wild leek is an allium belonging to the genus Allium. Since antiquity, this plant has been used as vegetable,
spice and as a medicinal plant. The purpose of the present work is to quantify the content of the total polyphenols and to
evaluate the antioxidant activity of the acetonic extracts (25%) of the green part of Allium sp. The quantification of total
phenols was performed by the Folin-Ciocalteu method while the antioxidant activity was evaluated using total
antioxidant activity (TAC), reducing ability (FRP), DPPH, chelation (FIC) test, H2O2 trapping and β-carotene
bleaching test. The total polyphenol content that has been recorded is of the order of 1636.84 20.482 mg EAG / 100g
DM. The green part of the studied plant revealed a total antioxidant activity of the order of 3047.55 75.09 mg EAG /
100g DM and an iron reducing activity of the order of 367.39 10.91 mg EAG / 100 g DM. In addition, the antiradical
power and the iron chelating activity of the antioxidants contained in the extracts are 36.2609 0.4135 mg EAG /
100g DM and 100.978 11.741 mg EDTA / 100g DM respectively. While the percentage of hydrogen peroxide
inhibitory activity and β-carotene bleaching test are estimated at 80.604 4.82% and 71.250 4.677% respectively |
