dc.description.abstractOlea europaeais a perennial plant know since antiquity and has several medicinal virtus, the medical properties of the olive tree are mainly attributed to the leaves; it is necessary to carry out an in-depth comparative study based on the morphology, physiology and phytochemistry on four varieties different of Olea. Europaea L... (Zeletni, cosmopolit, hamra et longue demiliana). Cultivated in the region of sidi-aiche. After, the results obtained from the morphological study of olive leaves revealed different between the varieties. The results of physicochemical analysis show that the hamra variety has the highest levels of moisture, mineral matter and yield. And the zeletni variety has the highest fat content. The phytochemical results obtained show that the zeletni variety has the highest levels of, TAC, DPPH, flavonoïde, polyphénol, tanins, chlorophyll a and b- carotènes, the cosmopolit variety has the highest levels of caroténoïdes. and the longue de miliana variety has the highest levels of Lycopène . the hamra variety have the highest level of Chlorophylle b.
